This Imperial Stout offers a luxurious sensory experience, defined by its decadent pastry-inspired profile. An intense bouquet of Cannelle de Saigon provides a woody spice that integrates seamlessly with the floral, creamy sweetness of Planifolia d'Ouganda vanilla. At its core, the roast character is driven by Fazendas Dutras coffee from Brazil, contributing deep notes of nutty espresso and dark cocoa. The 11% alcohol provides a significant yet smooth warmth that carries flavors of black licorice and dried figs. On the palate, it is viscous and chewy, delivering a harmonious balance between intense dessert-like sweetness and a lingering, roasty bitterness.
Appearance. SRM 40+, jet black and opaque. Thick, dense, dark tan head with moderate retention and visible legs due to high viscosity and alcohol.
Aroma. High intensity. Dominant roasted coffee (Fazendas Dutras), sweet floral vanilla (Planifolia d'Ouganda), and spicy Saigon cinnamon. Subtle background esters of raisin and prune over deep dark chocolate malt and light alcohol warmth.
Taste. Initial impression of rich dark chocolate and espresso. Significant sweetness from vanilla and woody spice from cinnamon meld with heavily roasted grain. Medium-high bitterness is present but tempered by high residual sweetness. Long, warming finish with an aftertaste of cocoa and spice.
Mouthfeel. Full to very full-bodied, viscous, and chewy. Velvety, luscious texture with smooth, noticeable alcohol warmth. Low to moderate carbonation.
