This collaborative Gose presents a vibrant, citrus-forward sensory profile, elevated by a lush fruit addition. The experience is defined by a bright intersection of tart lactic acidity and succulent stone fruit from the apricot. Layers of Corsican clementine and yuzu contribute profound citrus complexity, ranging from sweet mandarin notes to sharp, floral zest. A subtle saline thread weaves through the background, enhancing the mouthwatering fruit character without becoming overtly salty. At 6.5% ABV, it carries more weight than a traditional example, offering a robust malt backbone of doughy wheat while maintaining a refreshing, effervescent finish that remains true to the style.
Appearance. Pours a hazy, pale orange-gold (4-6 SRM) with a moderate to tall, dense white head that exhibits good retention and fine lacing.
Aroma. High intensity aromatics of ripe, fleshy apricot and zesty yuzu. Secondary notes of sweet clementine juice are supported by a clean, sharp lactic tartness and a subtle, doughy wheat malt character. No hop aroma is present.
Taste. Initial impression is a bright, medium-high lactic sourness balanced by the natural sweetness of apricot. The mid-palate reveals complex citrus layers of yuzu and clementine, followed by a light mineral salt character that provides a mouthwatering quality. Very low bitterness with no hop flavor; the finish is dry, acidic, and refreshing with lingering citrus oils.
Mouthfeel. Medium body with high, effervescent carbonation. The higher ABV provides a noticeable but well-integrated alcohol warmth. The salt addition lends a rounded, slightly thicker mouthfeel that counters the thinning effects of the acidity.
