This Gose is a vibrant tropical exploration, bursting with the sharp acidity of Pineapple and the pungent, tangy zest of Passionfruit. The base provides a sturdy foundation of doughy wheat malt, while the unique addition of Cocoa Pulp lends a delicate, exotic fruitiness and a soft mouthfeel that rounds out the sharp lactic edges. A fine dusting of Sea Salt sharpens the palate, enhancing the juicy tropical character and providing a crisp, mouthwatering finish. Effervescent and bright, it balances its elevated strength with refreshing tartness, creating a complex interplay between fruit sweetness and savory salinity.
Appearance. 3-4 SRM. Unfiltered and hazy with a deep yellow to light gold hue. Features a moderate white head with tight bubbles and fair retention.
Aroma. High intensity with dominant notes of fresh pineapple and tart passionfruit over a subtle, bready wheat backdrop. Clean lactic sourness is present, accompanied by a faint, floral sweetness from cocoa pulp and a clean mineral presence.
Taste. Initial impression is sharply tart with passionfruit and lemon-like acidity. Mid-palate reveals succulent pineapple and a subtle, tropical fruit flavor from the cocoa pulp. The finish is very dry and crisp, punctuated by a light but distinct sea salt character that lingers briefly. No hop flavor or bitterness is perceived, with acidity providing the balance.
Mouthfeel. Medium body with a slightly rounder, thicker mouthfeel due to the fruit solids and salt. High carbonation creates an effervescent, tingly sensation. Light alcohol warmth is present but well-integrated.
