Trembling Rose is a vibrant and complex American IPA that captures a sensory storm of hop intensity and fermentation depth. Pouring a medium gold with a persistent white head, it leads with an aromatic surge of tropical fruit and zesty citrus. The secondary fermentation with Brettanomyces introduces a rustic complexity, layering notes of dried hay and a subtle earthy funk over the bright hop profile. On the palate, sharp bitterness is balanced by a lean, grainy malt backbone, while the finish is exceptionally dry and refreshing. This beer balances the aggressive hop character typical of the style with an evolving, wild fermentation character that remains crisp and bright.
Appearance. Medium gold (approximately 7 SRM) with a slight, hazy luminescence. Features a medium-sized, off-white head with excellent persistence and significant lacing.
Aroma. High intensity hop aroma featuring notes of grapefruit, passion fruit, and mixed berries. A distinct fermentation character from Brettanomyces adds layers of leather, horse blanket, and ripe pineapple over a low, clean, grainy malt base.
Taste. Initial impression is of assertive hop bitterness with flavors of resinous pine and tropical fruit. The fermentation character is complex and slightly funky, leading to a bone-dry, crisp finish. The aftertaste is hoppy and bitter with a supportive, clean malt presence and minimal yeast-derived esters.
Mouthfeel. Medium-light body with a crisp, slightly drying texture and no harshness. High carbonation provides a lively effervescence, accompanied by a very light, smooth alcohol warmth.
