This Spice, Herb, or Vegetable Beer is an ethereal, botanical-forward session ale that transports the palate to a damp, primordial forest. Despite the low ABV, the sensory profile is remarkably complex, driven by an infusion of spruce tips, mugwort, and ground ivy. The spruce tips provide a resinous, bright citrus lift, while the mugwort and absinth-inspired botanicals contribute a deep, medicinal earthiness and a structural herbal bitterness. Ground ivy adds a subtle peppery, minty top note. These wild elements are layered over a lean, crackery malt base, resulting in a primitive yet refined elixir that emphasizes dry, refreshing forest-floor aromatics over sweetness.
Appearance. Pale straw to light gold with a slight, natural haze. Pours with a moderate, frothy white head that dissipates relatively quickly to a thin collar, leaving fine, spotty lacing on the glass.
Aroma. High aromatic intensity dominated by botanical complexity. Prominent notes of fresh pine resin and lemon zest from the spruce tips are layered with the cooling, mint-like peppery character of ground ivy. A distinct herbal, slightly wormwood-like earthiness from the mugwort and absinth ingredients provides a grounding base, while any hop aroma is suppressed in favor of these wild scents.
Taste. The initial impression is dry and vibrantly herbal. Sharp resinous spruce and peppery ivy flavors lead, followed quickly by a firm, clean bitterness derived from the mugwort. The absinth botanicals offer a hint of anise-like spice without being sweet. Malt flavor is low, providing just enough bready support to keep the herbs from being astringent. The finish is very dry, lingering with a persistent botanical bitterness and a clean, forest-like aftertaste.
Mouthfeel. Light-bodied and highly sessionable. Carbonation is moderate-high, providing a prickly, refreshing effervescence. There is no perceived alcohol warmth, and the finish is crisp with a very slight resinous grip from the spruce and herbs.
