Stupre is a sophisticated Grape Ale that bridges the gap between wild fermentation and fine viticulture. A base of red ale, aged for over a year in red wine barrels, provides a deep, garnet-hued foundation rich with vinous complexity. The addition of freshly pressed Riesling pomace introduces bright, floral aromatics and a delicate stone fruit acidity that dances alongside the rustic, earthy notes of the house wild yeast culture. Its time in oak yields subtle tannins and a dry, lingering finish, where the interplay of tart white grapes and seasoned wood creates a beautifully structured, effervescent, and deeply evocative sensory experience.
Appearance. Deep garnet to burgundy (18–24 SRM) with a fine-beaded, light tan to pinkish head that shows moderate retention. Clarity is generally good with a slight, natural brilliance from extended barrel aging.
Aroma. High intensity with a complex layering of Riesling pomace (green apple, floral honey, and a hint of mineral) atop a vinous red wine barrel character. Noticeable wild yeast influence provides earthy notes of leather and hay, while the malt provides a supporting toasted bread crust background. No banana or bubblegum esters are present.
Taste. Initial impression is tart and vinous, dominated by the bright acidity of Riesling grapes and stone fruit. The malt flavor is supportive and toasty, avoiding any heavy roast. Hop bitterness is very low, allowing the wood tannins and wild yeast acidity to provide structure. The finish is exceedingly dry and crisp, with a lingering aftertaste of grape skins and seasoned oak.
Mouthfeel. Medium body with high carbonation that creates a sparkling, effervescent sensation. A noticeable alcohol warmth is present, well-integrated with a moderate tannin-driven astringency and a crisp, acidic bite.
