Secular is a complex Spice, Herb, or Vegetable Beer that bridges the gap between ancient ritual and modern craft. The sensory profile is defined by a trifecta of unique additions: floral, apple-like notes of Chamomile, the resinous and balsamic depth of Cedar, and the delicate floral sweetness of Honey. These elements layer over a clean, medium-bodied base to create a Byzantine-inspired incantation of flavor. The cedar provides a structured, woody backbone that contrasts with the soft herbal lift of chamomile, while the honey adds a rounded mouthfeel and subtle nectar-like aroma, resulting in a spiritual, deeply grounded drinking experience.
Appearance. Deep gold to light amber (6-9 SRM). Pours with a slight haze and a persistent, creamy, off-white head that leaves moderate lacing.
Aroma. High intensity aromatic profile featuring prominent dried chamomile with its characteristic herbal and green apple scent. A distinct balsamic and resinous cedar woodiness follows, supported by subtle floral nectar from the honey. Hop aroma and yeast esters remain low to emphasize the botanicals.
Taste. Initial impression of light honey sweetness is quickly balanced by the grounding, slightly spicy and resinous character of cedar. The mid-palate is defined by chamomile’s floral and tea-like qualities. Malt flavor is bready and clean. Hop bitterness is mild, leading to a dry finish with a lingering woody and herbal aftertaste.
Mouthfeel. Medium body with moderate carbonation. A faint, pleasant woody astringency from the cedar provides structure and a clean mouth-cleansing effect. Features a smooth texture with light, well-integrated alcohol warmth.
