Imperial Stout 12 º
This Imperial Stout is an imposing, viscous masterpiece that pushes the boundaries of the style with the addition of salt and pepper. At a potent 12% alcohol by volume, it presents a massive profile of bittersweet chocolate, espresso, and charred grain. The salt addition acts as a flavor enhancer, amplifying the savory depths of the dark malts and providing a mineral counterpoint to the rich molasses sweetness. Subtle but distinct cracked pepper provides a slow-building, spicy warmth that integrates seamlessly with the high hop bitterness and the natural alcohol heat. Deep notes of raisin and dried fig emerge mid-palate, concluding in a long, warming, and complex finish.
Appearance. Opaque and jet black (40+ SRM) with a thick, dense, dark tan head. The beer exhibits significant viscosity, leaving prominent legs on the glass as it is swirled.
Aroma. High intensity aroma featuring dominant notes of roasted coffee, cocoa powder, and black licorice. The salt adds a subtle saline freshness, while the pepper contributes a light, earthy spice. Moderate dark fruit esters of prune and black currant are present alongside a noticeable but clean alcohol warmth.
Taste. Massive initial impression of dark chocolate and roasted grain. The savory salt component balances the residual malt sweetness, while black pepper adds a spicy prickle to the back of the throat. High bitterness from both roasted malts and hops provides structure. Complex layers of molasses, toasted bread, and dark fruit lead to a lingering, bittersweet finish with a pleasant peppery warmth.
Mouthfeel. Very full-bodied, thick, and velvety with a chewy texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, enhanced by a slight tingle from the pepper and a mouth-coating richness aided by the salt.
