Rouge Gorge is a sophisticated Wild Specialty Beer that harmonizes the bright, jammy essence of seasonal Belgian strawberries with the refined complexity of white wine barrel aging. The sensory experience is led by an aromatic bouquet of fresh berries and earthy wild yeast funk, underscored by a vinous, oak-forward depth. On the palate, the strawberries present a vivid but dry fruit character, sharpened by a lively lactic acidity. The months spent in oak contribute delicate tannins and hints of white grape, while the wild fermentation ensures a bone-dry finish. It is a vibrant, multifaceted ale where fruit and wood are elegantly integrated.

Appearance. Pours a hazy, soft ruby to deep pink color (10-15 SRM). It carries a thin, pale pink-tinted head with moderate to low retention, common for acidic fruit beers, leaving minimal lacing.

Aroma. High aromatic intensity featuring dominant notes of fresh-picked strawberries and strawberry preserves. This is layered with complex wild yeast traits of damp earth and mild leather, alongside a vinous white wine character and subtle toasted oak.

Taste. The initial impression is defined by bright, tart strawberry fruitiness that is notably dry rather than sweet. A firm lactic sourness provides a refreshing backbone, followed by mid-palate notes of white wine, gooseberry, and light wood tannins. The finish is crisp, bone-dry, and lingering with a tart berry aftertaste.

Mouthfeel. Light to medium-light body with high, spritzy carbonation that provides a prickly sensation on the tongue. A very mild tannic astringency from the strawberry seeds and oak aging adds structure, with a well-integrated, subtle alcohol warmth.
