Rose Gigot is an expressive Wild Specialty Beer that balances bold fruit with an intriguing piquancy. This vibrant sensory profile is defined by a deep cherry presence, offering both tart skin and succulent flesh notes that evoke a candy-like sweetness. The wild fermentation introduces a complex layer of rustic funk and sharp lactic acidity, which cuts through the 8% ABV strength. An unconventional addition of chili provides a gentle earthy undertone and a slow-building warmth on the palate, perfectly complementing the fruit’s brightness. Appearance. Pours a deep ruby to reddish-pink with a moderate haze. Topped by a light pink-tinted head with fair to poor retention, which is common in high-acid wild ales with spice additions.
Aroma. High intensity aromatics featuring prominent tart cherry and hints of red berry candy. Complex wild fermentation notes include light barnyard funk and leathery Brettanomyces character, complemented by a subtle earthy, peppery note from the chili.
Taste. Immediate impact of tart red cherries and a clean lactic sourness. The mid-palate reveals a candy-like fruit sweetness that is quickly balanced by wild, funky esters. A delicate chili heat emerges toward the finish, providing a spicy prickle that integrates with the alcohol warmth. Very low bitterness allows the acidity to drive the structure.
Mouthfeel. Medium body, which is more substantial than typical for the style due to the higher alcohol content. Moderate carbonation provides a crisp lift. A noticeable alcohol warmth is joined by a slight tingling sensation from the chili capsicum.
