This Gose is a terroir-driven expression that captures the Mosel vineyard through Pinot Noir pomace, lemon balm, and fig leaves. It pours with a delicate haze and a soft, pinkish-yellow hue. The aroma is a bright bouquet of citrusy lemon balm and the unique, slightly coconut-like earthiness of fig leaves, underpinned by a tart, lactic snap. On the palate, bready wheat malt supports vibrant notes of under-ripe red berries and grape skins from the pomace. A moderate salt presence provides a mouthwatering roundness, balancing the crisp acidity and leading to a bone-dry, refreshing finish.
Appearance. 3–6 SRM. Pale gold with a delicate pink blush. Unfiltered with a moderate haze. Moderate, fine-beaded white head with fair retention.
Aroma. Moderate intensity. Sharp lactic tartness blends with citrusy lemon balm and an herbal, slightly earthy note from fig leaves. Subtle hints of red grape must and a faint, clean bready wheat malt. No hop aroma.
Taste. Bright, medium-high acidity initially. Bready, doughy wheat malt flavor is complemented by the herbal complexity of lemon balm and the green, nutty character of fig leaves. Pinot Noir pomace adds a layer of tart red fruit and subtle tannins. Salt is noticeable, enhancing the flavors without being overtly salty. Very low bitterness; finish is clean, dry, and acidic.
Mouthfeel. Medium-light body. High carbonation provides an effervescent, prickly sensation. The salt content gives a tingly, mouthwatering quality and a slightly rounder feel than typical for the weight. No significant alcohol warmth.
