This bold Wild Specialty Beer showcases an intricate fusion of bright citrus and dry complexity. Fermented with a unique blend of house yeast, lactobacillus, and lager yeast, it delivers a sharp, lactic tartness seamlessly integrated with the vibrant, zesty character of seasonal kumquats. Despite its powerful 10.6% ABV, the addition of enzymes drives the attenuation to an exceptionally dry finish, preventing any heavy sweetness. A delicate dry hopping lends a whisper of floral and herbal hop aroma, beautifully rounding out the sharp, citrus-forward profile of this clean yet intensely wild and warming imperial sour.
Appearance. Pours a hazy, pale amber-orange with a warm golden hue derived from the kumquats. It is topped by a thin, white head that dissipates quickly to a persistent collar, leaving minimal lacing, typical for a high-gravity sour beer.
Aroma. High intensity aroma featuring prominent lactic acidity and vibrant citrus notes of kumquat peel, tangerine, and white grapefruit. Beneath the bold fruit, a subtle rustic house yeast character merges with clean, herbal hop notes from dry hopping and a faint, crackery malt background.
Taste. An initial wave of sharp, clean lactic sourness gives way to intense flavors of fresh kumquat, highlighting zesty citrus oil and tangy pulp. Extremely dry and highly attenuated with minimal malt sweetness. Hop bitterness is low but complemented by a light, citrus-pith astringency. Finishes crisp, tart, and clean with lingering citrus esters and well-integrated alcohol warmth.
Mouthfeel. Medium-light body, surprisingly light for its high alcohol content. Carbonation is high, creating a prickly, lively sensation. A noticeable but smooth alcohol warmth is present, accompanied by a very light, puckering astringency from the fruit peels.
