Ouranos is a sophisticated English Barley Wine transformed by two years of barrel aging with a wild culture. This 12.5% ABV ale presents a complex sensory journey, merging traditional British richness with vinous elegance. The profile is defined by a deep, maderized character and Port-like oxidation, results of its extended maturation. Layers of caramel and toffee malts are punctuated by a pleasant acidity from the wild fermentation, which provides a unique counterpoint to the beer's natural sweetness. Notes of dried dark fruits—reminiscent of raisins and plums—weave through a velvety, full-bodied palate, finishing with a lingering, smooth alcohol warmth and refined wood-aged complexity.
Appearance. Deep dark brown with prominent ruby highlights; clarity is brilliant despite the wild culture. It features a low, off-white head with minimal retention and significant legs reflecting the high viscosity and alcohol content.
Aroma. High intensity with a very rich, malty core of caramel and toffee. Distinctive maderized and Port-like oxidative notes are prominent, complemented by intense dried dark fruit esters. A subtle vinous acidity and soft, rounded alcohol warmth are present, while English hop aromas have subsided into a faint earthy background.
Taste. Initial impression is one of rich malty sweetness featuring complex layers of bread, biscuit, and toffee. This is immediately balanced by a pleasant, integrated acidity from the wild culture. Deep flavors of raisin and prune dominate the mid-palate. Hop bitterness is low, having faded with age, leading to a moderately dry, vinous finish with complex maderized and oxidative aftertastes.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low, enhancing the beer’s weight. A smooth, noticeable alcohol warmth is present without being harsh or hot.
