This Spring Gruit presents a vibrant, botanical tapestry woven into a refreshing sour base. The aroma is dominated by the citrus-forward perfume of bergamot zest and the delicate, honeyed floral notes of elderflower. On the palate, a crisp lactic acidity provides a bright stage for the resinous, forest-like character of spruce tips and the sweet-clover essence of woodruff. These ancient herbal additions provide a complex alternative to hops, resulting in a balanced, dry finish that celebrates the awakening of the season with both zesty brightness and earthy depth.

Appearance. Pale gold to light amber (4–7 SRM). Large, white, frothy head with moderate retention; slight haze from botanical oils and yeast.

Aroma. High intensity. Prominent citrusy bergamot zest and sweet, floral elderflower lead. Background notes of resinous spruce tips and sweet hay-like woodruff. Clean lactic sourness; negligible hop aroma.

Taste. Initial sharp, clean lactic tartness. Complex herbal mid-palate featuring resinous spruce and peppery woodruff. Bergamot provides a tea-like citrus bitterness. Finishes dry and crisp with lingering floral and piney notes; minimal hop flavor.
