This Imperial Wild Specialty Beer offers a lush, sensory-driven experience centered on ripe peach puree and an aromatic peach tea infusion. The nose is dominated by high-intensity stone fruit and herbal tea notes, backed by a sharp, wild acidity. On the palate, the bold 8.5% ABV provides a structural warmth that supports flavors of jammy peach and earthy tea tannins. The fermentation character introduces a clean lactic tartness that cuts through the fruit richness, leading to a complex, slightly astringent finish. It balances the weight of an imperial sour with the refreshing, botanical edge of a summer infusion.
Appearance. Deep golden to amber-orange (10-14 SRM) with a persistent haze from the peach puree. Pours with a moderate, fine-beaded off-white head that shows fair retention and light lacing.
Aroma. High intensity of fresh, sun-ripened peach and floral tea leaves. Distinctive wild fermentation character presents as a clean, sharp tartness with subtle earthy notes. Low spicy phenols and no perceptible hop aroma.
Taste. Initial impression is a vibrant burst of tart peach and stone fruit esters. A moderate malty sweetness is quickly balanced by assertive lactic acidity and the drying, tannic grip of the tea infusion. The finish is long and complex, merging fruit pulp with a clean, acidic snap and a lingering herbal tea aftertaste.
Mouthfeel. Medium-full body, more substantial than typical wild ales due to the imperial strength and fruit solids. Moderate carbonation provides a lively prickle. A noticeable but well-integrated alcohol warmth is present, accompanied by a slight tea-derived astringency.
