Imperial Stout 11 º
Minerva is a monumental Imperial Stout that has been refined through 18 months of maturation in Bourbon Barrels. The sensory experience is dominated by an opulent fusion of Corica Espressos and rich Cocoa, delivering layers of dark-roasted coffee and bittersweet chocolate. Fragrant Vanilla Beans add a creamy, aromatic sweetness that balances the charred oak and spirituous depth of the bourbon influence. Despite its 11% ABV, the profile remains exceptionally smooth, weaving together dark fruit esters of raisins and figs with a velvety, full-bodied texture. It concludes with a lingering, warming finish of espresso and toasted oak, exemplifying a harmonious balance between intense roast and barrel-derived complexity.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, dark tan head that shows moderate retention, leaving oily legs on the glass indicative of high viscosity and alcohol.
Aroma. High intensity and deeply complex. Dominant scents of freshly ground Corica Espressos and dark cocoa powder are layered over rich Bourbon Barrel notes of toasted oak, caramel, and vanilla. Subtle background esters of dried plums and black currants mix with a smooth, well-aged alcohol presence.
Taste. Bold initial impression of espresso and bittersweet chocolate. The mid-palate reveals luscious Vanilla Beans and toffee-like malt sweetness, countered by firm roasted bitterness. The 18-month aging provides a sophisticated oak character and a hint of bourbon spirit. The finish is long and warming, with a lingering espresso and dark malt dryness that prevents it from being cloying.
Mouthfeel. Full to very full-bodied with a luxurious, chewy, and velvety texture. Carbonation is low to moderate. A significant but gentle alcohol warmth spreads through the chest, consistent with its strength.
