This Brett Beer presents an elegant fusion of orchard fruit and vinous complexity. Aromas of ripe Pear and the floral, honeyed notes of Chenin grapes intertwine with a delicate Brettanomyces funk, evoking sun-drenched hay and soft earthy undertones. The palate is exceedingly dry and crisp, showcasing the high attenuation typical of the style, where the subtle sweetness of pear transitions into the bright acidity and mineral character of white wine. Appearance. Pale straw to light gold (3–5 SRM). Translucent with a slight haze and a fine-beaded, pillowy white head that shows moderate retention and light lacing.
Aroma. Moderate to high intensity with prominent aromas of ripe pear and floral Chenin Blanc grapes. Secondary notes include wild yeast esters of pineapple and apricot, complemented by a light funk reminiscent of hay and dusty earth. Very low crackery malt.
Taste. Initial impression is crisp and bone-dry. Flavors of fresh pear and white wine acidity lead the palate. Very low hop bitterness allows the fermentation character—ranging from fruity esters to a subtle leathery earthiness—to shine.
