Hail Billie is a monumental Imperial Stout that commands attention with its decadent, spirit-forward profile. Aged in rum barrels, this massive beer delivers an intense sensory experience defined by layers of rich molasses and sweet vanilla. The aroma is saturated with dark chocolate, espresso, and the distinct warmth of aged rum, complemented by subtle hints of dried plums and figs. On the palate, the sheer viscosity is matched by deep roasted grains and a bittersweet complexity that balances the sugary weight of the molasses. A lingering, velvety finish leaves a trail of charred oak and smooth alcohol warmth, hallmarks of its impressive strength.
Appearance. Opaque jet black (40+ SRM) with a dense, dark tan head of moderate retention. High alcohol and viscosity are visible as oily legs upon swirling.
Aroma. High intensity; prominent bouquet of spicy rum, molasses, and vanilla bean. Deep roasted malt provides notes of dark chocolate and espresso, supported by dark fruit esters like raisins and prunes. Significant but smooth alcohol presence.
Taste. Initial rich sweetness of molasses and vanilla is immediately followed by aggressive roasted malt character resembling bittersweet chocolate and burnt grain. The rum barrel influence adds complexity with oaky tannins and dark spice. Medium-high bitterness provides balance against the heavy malt backbone, finishing with a long, warming, and spirituous aftertaste that remains velvety.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. Significant, smooth alcohol warmth is highly apparent without being harsh.
