Intense aromas of tropical mango and blueberry from Mosaic and Citra lead the charge, while Ekuanot contributes nuanced notes of lime zest and pithy citrus. The house Brett provides a youthful, stone-fruit ester profile with just a whisper of rustic hay. It pours a hazy straw color with a persistent white head. The palate is exceptionally dry and crisp, delivering a firm citrus bitterness that lingers alongside a clean, funky complexity and a refreshing, highly attenuated finish.
Appearance.3–6 SRM. Hazy straw to pale gold. Effervescent, dense white head with moderate to good retention and light lacing.
Aroma.High intensity. Dominated by tropical fruit (pineapple, mango) and citrus (grapefruit). Mosaic provides berry notes, while Citra offers lime. Subtle Brett character presents as ripe peach and a light, earthy funk with hints of wet hay.
