This Wild Specialty Beer is a vibrant, aromatic exploration of botanicals. The centerpiece is the pungent, peppery Thai Basil, which provides a distinctive anise and clove-like depth that integrates seamlessly with the bright, citrusy punch of lime zest. A clean lactic acidity provides a sharp, refreshing backbone, lifting the herbal complexity. While the malt remains a subtle, cracker-like foundation, the fermentation character introduces light orchard fruit esters and a hint of earthy funk. It concludes with a bracingly dry, zesty finish that highlights the savory-meets-sour interplay of the Brussels-grown basil and citrus peel.
Appearance. SRM 3–5. Pale gold to straw color. Generally clear to slightly hazy. Pours with a moderate white head that shows moderate to poor retention, leaving light lacing.
Aroma. High intensity aromatics. Dominant Thai Basil offers spicy, herbal notes of anise, licorice, and fresh peppercorn. Secondary lime zest provides a sharp, zesty citrus top note. Moderate lactic sourness is present with clean, lemony sharpness. Low grainy-sweet malt and a subtle earthy wild yeast character.
Taste. Immediate sharp lactic acidity and bright lime zest flavor. The mid-palate is dominated by the savory, herbal punch of Thai Basil, contributing flavors of clove and mint. Hop bitterness is very low (perceived 0–10 IBU), as the acidity provides the balance. Malt is a neutral, biscuit-like background. The finish is very dry and refreshing, with lingering lime and herbal spice.
Mouthfeel. Medium-light body. High carbonation provides a crisp, effervescent scrub on the tongue. Light alcohol warmth that is well-integrated. No significant astringency despite the heavy botanical use.
