The unique addition of Barbe Rouge hops delivers a signature aroma of ripe red berries and wild strawberries, complemented by the vibrant citrus, grapefruit, and tropical notes of Citra hops. A subtle, herbal complexity is contributed by Columbus hops. Supported by a highly attenuated base of Pils malt and spelt, which imparts a delicate, rustic graininess, the beer remains exceptionally dry and refreshing. A touch of sugar ensures a light body, allowing the innovative hop profile to dominate before finishing clean and sharply bitter.
Appearance.Pale straw to light gold with a slight, hazy sheen from the spelt. Crowning the pour is a dense, persistent white head that leaves delicate, soapy lacing.
Aroma.Pronounced aroma dominated by bright red berries, raspberry, and sweet strawberry from Barbe Rouge, layered with classic citrus, lime zest, and mango notes from Citra. A faint, dank, resinous undertone from Columbus provides depth. Low, clean, grainy maltiness from the Pils malt supports, with no noticeable warming alcohol or diacetyl.
Taste.Initial impression is remarkably hop-forward and refreshing. Flavors of red currants, ripe berries, and grapefruit dominate, backed by a very light, cracker-like malt profile with a faint, rustic graininess from spelt. High bitterness is clean and crisp but not harsh, well-balanced by the dry, highly attenuated finish. The aftertaste is long, dry, and distinctly hoppy, showing lingering citrus peel and pine.
