Ensemble is a vibrant interpretation of a Gose, blending historical tartness with modern botanical flair. The inclusion of kumquats amplifies the traditional lactic acidity, offering a bright, citrusy zing that mimics a classic lemon-like coriander profile. A subtle undercurrent of Habanero provides a delicate, floral pepper aroma and a whisper of warmth on the finish without overwhelming the palate with heat. The base remains rooted in soft wheat and Pilsner malts, providing a doughy foundation that balances the light mineral saline note. Effervescent and bone-dry, it delivers a refreshing, multifaceted sensory experience where sharp citrus brightness meets a faint, tingling spice.

Appearance. Pale straw to yellow (3–4 SRM). Unfiltered with a moderate, persistent haze. Tall white head with tight bubbles and good retention; highly effervescent.

Aroma. Moderate intensity. Sharp lactic sourness is immediately present, layered with a distinct zesty kumquat aroma and floral, fruity notes from Habanero peppers. Low doughy wheat malt character. No hop aroma. A very faint mineral saltiness and a bright, citrus-forward profile dominate.

Taste. Initial impression is tart with kumquat and lactic acidity. Moderate bready wheat malt flavor provides a soft mid-palate. Very low hop bitterness. Distinctive but restrained salt character provides a mouthwatering quality. The Habanero offers a light vegetal pepper flavor and a very mild, creeping warmth that complements the acidity.
