This single malt and single hop American IPA showcases the singular brilliance of Simcoe hops laid over a crisp, clean canvas of Pilsner malt. It pours with a striking clarity, unleashing a vibrant bouquet of pine resin, passion fruit, and bright grapefruit driven by the Simcoe hops. The Pilsner malt provides a delicate, crackery foundation that allows the assertive hop bitterness to shine. Crisp, dry, and assertively bitter, this elegant showcase highlights the resinous depth and tropical versatility of its featured hop, finishing clean with lingering piney warmth and pristine drinkability.
Appearance. Medium gold color (approximately 6 SRM) with brilliant clarity. It displays a dense, rocky, persistent white head that leaves thick, soapy lacing on the glass.
Aroma. High intensity. Prominent pine resin, woodsy sap, and dank earthiness mingle with bright grapefruit peel, passion fruit, and light apricot. The malt aroma is very low, clean, and crackery, allowing the hops to dominate. Fermentation is clean with negligible yeast-derived esters.
Taste. Dry and assertively bitter initial impression. High hop flavor of resinous pine, grapefruit zest, and tropical passion fruit. The malt flavor is low, neutral, and crackery, supporting the hop profile without adding sweetness. Clean fermentation character. Balance is heavily hop-forward, leading to a crisp, dry finish with a lingering, clean, resinous bitterness.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, enhancing the dry finish. No harshness or astringency, with a very subtle, well-integrated alcohol warmth.
