This Double IPA presents a bold sensory collision between Talus and Nelson Sauvin hops. The nose is greeted by a high-intensity bouquet of crushed gooseberries and sauvignon blanc grapes from the Nelson Sauvin, intertwined with the unique dried rose, sage, and pink grapefruit notes of Talus. On the palate, a clean, neutral malt base allows these complex hop layers to shine, delivering a firm but smooth bitterness that transitions into a crisp, dry finish. Subtle tropical fruit and resinous pine linger long after the sip, while a restrained alcohol warmth underscores its 8% strength without compromising its high drinkability.
Appearance.Deep gold to light orange-copper in color with good clarity. Features a moderate-sized, persistent, off-white head that leaves dense lacing on the glass.
Aroma.Intense hop-forward aroma characterized by white wine grapes, gooseberry, and tropical fruit from the Nelson Sauvin, paired with pink grapefruit, pine resin, and a distinct floral-herbal quality from the Talus. Malt is neutral and supportive in the background.
Taste.Strong, complex hop flavors of citrus zest, crushed grapes, and resinous herbs. Bitterness is high but smooth and lacking harshness. A low, clean, grainy malt character supports the hops before a dry to medium-dry finish with a long, hoppy aftertaste.
Mouthfeel.Medium body with a smooth, almost velvety texture. Moderate carbonation and a noticeable but well-integrated alcohol warmth. No hop-derived astringency.
