Deal With It is a vibrant, modern take on a Gose that masterfully balances tropical decadence with a sharp, spicy edge. This strong variant pours with a sunny haze, releasing high-intensity aromas of ripe pineapple and tangy passion fruit. The palate is a masterclass in tension, where the initial doughy sweetness of the wheat malt is quickly met by a prickly habanero heat. Lactic tartness and a mineral-rich salt character provide a crisp counterpoint to the fruit’s richness, while the finish is dry and lingering, leaving a playful sting on the tongue and a refreshing, citrusy zest that invites another sip.
Appearance. Pale yellow to light gold (4-6 SRM) with a persistent, moderate-to-full haze from wheat and fruit additions. It supports a tall, white, effervescent head with tight bubbles and fair lacing.
Aroma. High intensity, dominated by lush tropical fruit notes of fresh pineapple and tart passion fruit. A clean, lemony lactic sourness mingles with a subtle, bready wheat malt presence and a light, peppery habanero spice. No hop aroma.
Taste. Initial impression is a bright burst of tropical fruit sweetness, followed by a moderate lactic acidity. A noticeable salt character enhances the fruitiness and adds a savory dimension. The doughy malt backbone supports a growing habanero heat that provides a sharp, stinging finish. Very low bitterness; acidity and chili heat provide the primary balance. The aftertaste is long, spicy, and refreshingly tart.
Mouthfeel. Medium-full body, slightly heavier than a traditional example due to the 6.1% ABV and fruit solids. High carbonation creates a tingly, effervescent sensation. A distinct warmth is present from both the alcohol and the capsaicin sting. The salt imparts a mouthwatering, rounded quality.
