La Source Beer Co. Daim

Belgian Tripel 8 º 50 IBU
This Belgian Tripel offers a contemporary twist on the monastic classic, trading traditional heavy esters for a sharper, more botanical profile. Pouring a brilliant deep gold with a persistent, rocky white head, it leads with an aromatic bouquet of resinous hops and delicate, perfumed elderflower. The palate is defined by a firm bitterness that surpasses traditional examples, supported by a clean Pilsner malt base and pronounced peppery phenols. Effervescent and exceptionally dry, it hides its strength behind a crisp, resinous finish that lingers with a sophisticated floral spice and a clean, refreshing bite.
Appearance. Deep yellow to pale gold (approx. 5-6 SRM). Brilliant clarity with high effervescence. Long-lasting, creamy, rocky white head that leaves significant lacing on the glass.
Aroma. Moderate intensity. Low fruity esters compared to style standards, with a focus on spicy, peppery phenols. Distinctive resinous hop notes and a high floral, perfumy elderflower character. Light, grainy-sweet malt background.
Taste. Initial impression of soft, grainy-sweet malt quickly overtaken by a firm, assertive hop bitterness. Low fruity esters. Prominent spicy, peppery yeast phenols and resinous hop flavors. Distinct elderflower floral notes persist through the mid-palate. Very dry, clean finish with a lingering peppery aftertaste.
Mouthfeel. Medium-light body with a deceptively light weight for the gravity. High carbonation providing a lively, prickly effervescence. Subtle, well-integrated alcohol warmth. No harshness or astringency.
