Cronos represents a sophisticated fusion of Italian viticulture and Belgian brewing artistry, utilizing Sangiovese grape pomace to create a vibrant Grape Ale. The eighteen-month barrel-aging process refines the sensory profile, imparting subtle oak tannins that intertwine with the rustic, berry-like character of the grapes. On the nose, delicate vinous notes lead into a palate where a soft tartness meets a supportive, pale malt backbone. Its rosé-inspired appearance and sparkling carbonation mimic a fine sparkling wine, while the wild ale base provides a nuanced complexity. The finish is remarkably dry and crisp, showcasing a harmonious balance between red fruit, wood, and an elegant fermentation profile.
Appearance. SRM 6–10. Deep rosé to light ruby with a faint burgundy tint. Displays a pinkish-white head with medium-low retention and delicate lacing. Clarity is generally good with a sparkling, wine-like brilliance.
Aroma. Moderate to high intensity. Pronounced Sangiovese character with notes of red cherry, strawberry, and a hint of earthy tobacco. The malt is low and crackery, providing a neutral base. Fermentation esters offer subtle stone fruit and spice, while the eighteen months of barrel aging contribute a very light, refined oak and leather nuance.
Taste. Initial impression is vinous and refreshingly crisp. Malt flavors are supportive and pale, allowing the Sangiovese grape character to lead with flavors of tart red berries and rustic tannins. Hop bitterness is very low, and hop flavor is absent. The fermentation is clean with a mild, pleasant tartness that enhances the dryness. Finishes exceedingly dry with a lingering hint of fruit skin and oak.
Mouthfeel. Medium-light body with high, sparkling carbonation that provides a prickly, refreshing sensation. Very low alcohol warmth at 5.7% ABV. Slight tannin-driven astringency from the grape pomace and oak provides structure without being harsh.
