Clair Obscur is a vibrant, modern reimagining of a Straight Sour Beer, fused with the botanical elegance of a traditional Witbier. This pale, effervescent ale leads with a refreshing lactic snap, seamlessly integrated with the zesty brightness of lime and the cooling, herbal lift of fresh mint. A base of wheat malt provides a soft, bready foundation that balances the sharp acidity. Fragrant coriander seeds contribute a subtle floral and citrus-driven complexity. This sessionable sour finishes exceptionally dry and crisp, offering a bright, multidimensional sensory experience that balances sharp fruit esters with aromatic spices.
Appearance. Pale straw color (2-3 SRM). Persistent, dense white head with moderate lacing. Slight haze is present from the wheat-based grist and spice additions.
Aroma. High intensity lactic sourness with a sharp, lemony edge. Distinctive lime zest and aromatic, citrusy coriander dominate the profile. A subtle, cooling herbal note from mint intermingles with soft, crackery wheat malt and light fruity esters. No hop aroma.
Taste. Immediate, clean lactic sourness and bright lime acidity. The palate is supported by a light, bready wheat malt flavor. The mid-palate reveals floral coriander and a refreshing, clean minty character. Hop bitterness is undetectable. The finish is very dry and crisp with a lingering, tart lime-pith aftertaste.
Mouthfeel. Light body with a prickly, high carbonation that enhances the perceived acidity. No alcohol warmth. Crisp and refreshing mouthfeel with no astringency.
