Chaos is a vibrant Grape Ale that bridges the gap between brewery and vineyard with an unconventional, wild spirit. The addition of Syrah pomace introduces a sophisticated vinous depth, offering notes of dark red fruit and a subtle, rustic earthiness. This is brightened by the jammy, floral tartness of raspberry and the sharp, botanical citrus edge of a homemade grapefruit tonic. The result is a multi-layered sensory experience where the crispness of a sparkling wine meets the clean, bready foundation of a well-crafted ale. It finishes remarkably dry and refreshing, with the complex fruit profile providing a lingering, zesty brightness.
Appearance. Deep ruby to burgundy color (18-22 SRM) with a faint pink-tinted, creamy head of moderate retention. Clarity is good, though a very slight fruit-derived haze may be present.
Aroma. High aromatic intensity featuring prominent vinous characters of the Syrah grape, specifically dark berries and light spice. This is layered with high notes of fresh raspberry and sharp grapefruit zest. Malt is low and bready, while fermentation is clean with only a hint of spicy esters and no detectable hop aroma.
Taste. Initial impression is tart and fruit-forward. Flavors of red grape skins and jammy raspberry are at the forefront, followed by a pithy grapefruit bitterness. The malt character is supportive and neutral, providing a light cracker-like base. Hop flavor is absent. Bitterness is low but enhanced by the citrus tonic. The finish is exceedingly dry, crisp, and refreshing with a lingering fruit acidity.
Mouthfeel. Medium-light body with high carbonation that produces a prickly, sparkling effervescence. A light tannic astringency from the grape skins adds structure, while the acidity contributes to a very dry mouthfeel. Subtle alcohol warmth is present.
