This Double Black IPA presents a sophisticated collision of deep-roasted malt and vibrant, modern hopping. Intense layers of Simcoe and Cryo Simcoe lead the profile with assertive pulses of resinous pine and zesty grapefruit. The addition of Sorachi Ace introduces a unique sensory twist, offering distinctive notes of lemon peel and a whisper of herbal coconut. Despite its midnight hue, the malt character remains sleek and supportive, contributing hints of dark chocolate and toasted bread without acridity. At 8% ABV, a well-integrated warmth bolsters the firm bitterness, culminating in a dry, crisp finish that highlights its aggressive hop-forward intent.
Appearance. Opaque black with deep mahogany highlights at the edges (35-40 SRM). Crowns with a persistent, creamy light tan head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring dank pine, passion fruit, and bright lemon zest. The Sorachi Ace adds a faint herbal, dill-like, or coconut edge. Low malt presence of cocoa and light toast provides a background for the hops. Clean fermentation profile.
Taste. Initial impression is hop-dominant with sharp resin and citrus oil flavors. Mid-palate reveals a smooth, debittered malt character with notes of cold-brew coffee and dark cocoa. High bitterness is firm and clean, leading to a very dry finish where lingering notes of pine and lemon-grass persist. No harsh, burnt, or ashy aftertaste.
Mouthfeel. Medium-bodied with a smooth, almost velvety texture. Moderate carbonation. A noticeable but pleasant alcohol warmth glows on the swallow. Low astringency despite the dark malts.
