This Straight Sour Beer is a vibrant, cocktail-inspired collaboration with Bélier Bar, delivering a sophisticated sensory profile at 6.66% ABV. A sharp, clean lactic acidity provides a crisp canvas for the creative additions of Cedrat, Chamomile, and Tonka. The aroma is led by zesty citrus oils and a delicate floral herbalism, while the palate balances intense lemony sourness with the complex, spiced sweetness of vanilla and almond from the Tonka beans. Effervescent and refreshing, it finishes remarkably dry, leaving a lingering impression of botanical elegance and bright citrus zest.

Appearance. Pale straw color (2-3 SRM). Pours with a slight haze and a large, frothy white head that dissipates fairly quickly. Highly effervescent with visible carbonation.

Aroma. High intensity. Dominant clean lactic sourness and sharp Cedrat citrus zest. Pronounced floral notes of Chamomile weave through a background of vanilla, cinnamon, and almond-like spices derived from Tonka beans. No hop aroma; light crackery malt.

Taste. Initial impression is a bracing, clean lactic acidity. Mid-palate reveals layers of tart citron fruit and herbal Chamomile tea. The Tonka provides a unique counterpoint, offering a subtle spiced sweetness that rounds out the sharp edges without adding heavy sugar. No hop bitterness. Finishes dry and crisp with a lingering citrus and spice aftertaste.
