This refreshing Gose presents a vibrant interplay between bright citrus and subtle garden spice. A soft foundation of Pilsner and wheat malts supports the tartness of clean Lacto-fermentation. The addition of Pomelo introduces a zesty, grapefruit-like lift that harmonizes beautifully with traditional citrus-forward coriander. On the finish, a distinct but restrained vegetal note from Jalapenos provides aromatic complexity without overwhelming capsaicin heat, while a delicate lick of sea salt enhances the mouthwatering, crisp character. Effervescent and bone-dry, it balances sharp acidity with a unique botanical profile for a sophisticated, highly sessionable experience.
Appearance. Straw to pale yellow (3 SRM); hazy and unfiltered with a moderate white head of tight bubbles showing good retention.
Aroma. Moderate to high intensity featuring bright pomelo zest and fresh green jalapeno skin. A bready wheat and crackery malt backbone is complemented by citrusy coriander and a clean, lactic tartness.
Taste. Initial impression is tart and citrusy with distinct pomelo juice. Moderate doughy malt flavors follow, balanced by a light salt character that isn't overtly briny. The jalapeno provides a fresh, peppery flavor with negligible heat. Very low bitterness; finish is dry and acidic with a lingering citrus pith aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. The salt provides a tingly, mouthwatering quality that rounds out the mouthfeel without adding weight.
