This artisanal Spice, Herb, or Vegetable Beer presents a complex gastronomic profile, bridging the gap between a robust Bock and a refined Golden Ale. Infused with rosemary and rosemary honey, it leads with an assertive herbal freshness that intertwines with a rich triple-malt backbone. Sensory layers reveal toasted bread crust and subtle caramel, evolving into nuanced notes of cherry, pear, and a flicker of black pepper. Though bottle-conditioned and unfiltered, the finish remains remarkably clean and persistent, balancing a lingering malt sweetness with a slow-developing dryness. It offers a sophisticated, wood-like depth from residual yeast without the heat of its six percent alcohol.
Appearance. Deep amber-gold (12-14 SRM) with a persistent, creamy off-white head. Unfiltered and hazy due to bottle conditioning, showing visible yeast sediment.
Aroma. High intensity herbal aroma dominated by fresh rosemary and floral rosemary honey. A rich malt base provides scents of toasted bread and warm crust. Subtle yeast-derived esters of cherry and pear emerge alongside a light phenolic black pepper spice and a faint, woody earthiness.
Taste. Initial impression is of sweet, toasted malts and honeyed richness. Robust rosemary flavor is evident throughout, harmonizing with caramel and dark fruit notes of cherry and pear. Hop bitterness is low and unobtrusive. The mid-palate features a peppery spice, leading to a complex finish where persistent toasted malt sweetness eventually gives way to a slow, clean dryness.
Mouthfeel. Medium-full body with a smooth, slightly creamy texture from the residual yeast. Carbonation is moderate and natural, providing a gentle effervescence. Alcohol warmth is low and well-integrated, with no astringency despite the heavy herbal infusion.
