La Sirène Brewing Imperial Praline

This Imperial Praline is a decadent interpretation of a Belgian Dark Strong Ale, where the style's traditional complexity meets the rich additions of cacao, hand scraped vanilla, and hazelnut. The sensory profile is led by an intense bouquet of dark chocolate and toasted nuts, interwoven with the characteristic yeast esters of dried plums and figs. On the palate, a deep, bready-toasty malt base supports layers of creamy vanilla and bittersweet cacao. While robust and warming at eight percent alcohol, it maintains a sophisticated balance, finishing with a smooth, lingering nuttiness and a gentle spicy phenol character that keeps the richness in check.
Appearance. Deep coppery-brown to dark mahogany (SRM 18-22) with excellent clarity. It supports a huge, dense, and persistent light tan head that leaves significant lacing on the glass.
Aroma. High intensity with a complex blend of rich, bready-toasty malt and deep fruit esters reminiscent of raisins and dried cherries. Distinctive notes of dark cacao and toasted hazelnut are prominent, supported by a background of sweet, hand scraped vanilla and a soft, spicy alcohol perfume.
Taste. Rich maltiness initially delivers flavors of dark caramel and toasted bread, quickly followed by a decadent wash of chocolate and nutty hazelnut. Esters provide layers of figs and dates. Bitterness is medium-low, providing just enough balance against the malt and adjunct sweetness. The finish is moderately dry and smooth with a lingering praline aftertaste.
Mouthfeel. Medium-full body with a creamy, luxurious texture. High carbonation provides a lively lift that prevents the beer from feeling heavy. A noticeable but smooth alcohol warmth is present.
