La Sirène Brewing Field Work

La Sirène’s Field Work is an elegant interpretation of a Belgian Single, functioning as a vibrant table beer with a sophisticated yeast profile. Fermented naturally in an open-top stainless steel vessel with the brewery’s House Yeast, it presents an expressive bouquet of spicy black pepper phenols and ripe orchard fruit. The palate is defined by a soft, crackery malt base that yields quickly to a firm, floral hop bitterness. This low-ABV ale is exceptionally dry and highly carbonated, offering a crisp, refreshing character that balances rustic farmhouse charm with the clean, bitter finish of a classic monastic session beer.
Appearance. Pale straw to light gold (3–4 SRM). Displays a billowy, persistent white head with excellent lacing and good clarity, though a very slight natural haze may be present from the uncontrolled fermentation.
Aroma. Moderate to high intensity. Dominated by peppery phenols and fruity esters reminiscent of fresh pear and red apple. Low malt presence provides a background of cracker and light grain, complemented by medium-low spicy and floral hop notes.
Taste. Initial flavors of honeyed biscuit and grainy malt are quickly overtaken by a moderate spicy hop flavor. High attenuation leads to a bone-dry finish where medium-high bitterness is accentuated. The fermentation character is forward, featuring lingering notes of clove and lemon zest in the clean, bitter aftertaste.
Mouthfeel. Light body with high, prickly carbonation that enhances the beer’s crispness. Exceptionally smooth with no perceived alcohol warmth, finishing very dry without significant astringency.
