This 100% spontaneous Wild Ale captures a distinct sense of place through the use of native wild yeast and traditional open-air cooling in a coolship. A masterful blend of one, two, and three-year-old components aged in French oak, it delivers a sophisticated sensory profile. Expect an aromatic landscape of lemon zest and stone fruit intertwined with rustic, earthy funk reminiscent of sun-dried hay. The extended maturation in French oak introduces structured tannins and subtle vinous notes that complement the beer's vibrant acidity. It finishes remarkably bone-dry and effervescent, showcasing the depth and evolving complexity typical of a well-aged, blended spontaneous fermentation.
Appearance. Deep straw to pale gold color with a slight, natural haze. Pours with a fine-beaded, white head that shows moderate retention and leaves light, delicate lacing.
Aroma. High intensity with a complex interplay of fruity esters—specifically apricot and citrus—and classic wild funk notes like wet hay, horse blanket, and dusty earth. Subtle toasted French oak and a faint lactic tartness add depth.
