A sophisticated collaboration with Mac Forbes, this Brett Beer showcases a masterful marriage of wild fermentation and vinous influence. It pours a hazy straw gold, releasing a complex bouquet of white peach, underripe melon, and the rustic barnyard funk characteristic of Brettanomyces. The palate is defined by its bone-dry attenuation and vibrant grape-derived acidity, reminiscent of a crisp Chardonnay. Notes of wet hay and dusty earth meld with bright citrus zest, while the grape skins contribute a delicate mineral structure. This elegant wild ale is light-bodied and highly effervescent, finishing with a clean, refreshing snap and a lingering floral earthiness.
Appearance. SRM 3–5. Pale straw to light gold with a distinct haze. Forms a voluminous, frothy white head with moderate retention and fine, delicate lacing.
Aroma. Moderate-high intensity featuring a blend of tropical fruit, apricot, and white grape skins. A prominent but refined funk presents as hay, horse blanket, and light earthiness, over a background of cracker-like malt.
Taste. Initial impression is bone-dry and crisp. Flavors of lemon zest and green grape lead into a complex fermentation character of leather and spicy phenols. Hop bitterness is very low, allowing a light, refreshing tartness to provide balance. The finish is remarkably clean with a short, dry aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation. Very well-attenuated and lean on the palate. Minimal alcohol warmth is present, though the high carbonation provides a lively, scrubbing texture.
