This Imperial Stout offers an opulent sensory journey, starting with its unique foundation of dates, almonds, and honey. Aging in Dominican rum barrels transforms the profile into a complex tapestry of dark chocolate and espresso, interwoven with exotic notes of sun-dried figs and marzipan. The rum influence introduces layers of spiced vanilla and toasted oak that meld seamlessly with the underlying honeyed sweetness. Appearance. Jet black and completely opaque (40+ SRM). It pours with a dense, persistent deep tan head that leaves thick lacing. High viscosity and alcohol content are visible as slow-moving legs on the glass.
Aroma. High intensity aroma featuring rich dark chocolate, roasted coffee, and charred grain. Distinctive notes of sweet dates and subtle almond nuttiness are enhanced by the rum barrel influence, contributing aromas of vanilla, oak, and molasses. Low earthy hop character and a clean, warming alcohol presence.
Taste. Initial impression is of intense bittersweet chocolate and espresso. The mid-palate reveals complex layers of dates and honey, supported by a significant almond-like marzipan flavor.
