This complex Old Ale presents a deep mahogany red hue, reflecting its year-long maturation in oak barrels. The sensory journey begins with an atypical but vibrant hop profile for the style, showcasing bold citrus notes of lemon and papaya that leap forward. This tropical brightness soon gives way to a rich, traditional malt backbone characterized by layers of caramel, toffee, and roasted coffee. The extended aging process imparts a sophisticated vinous character and subtle wood tannins, creating a multifaceted profile. On the palate, the interplay between malty sweetness and roasted depth ensures a lingering, warming finish that continues to evolve with every sip.
Appearance. Deep mahogany red (18-22 SRM). Dense, light tan foam with excellent persistence and fine lacing. Generally clear, though potentially showing a faint haze from long maturation.
Aroma. High intensity. Initial citrusy hop character featuring lemon and tropical papaya. Secondary aromas reveal deep malt complexity with notes of caramel, toasted bread, and roasted coffee. Moderate fruity esters suggesting dried dark fruits and a vinous, sherry-like quality from oak aging.
Taste. Rich malt-forward initial impression with flavors of molasses and caramel. Mid-palate introduces roasted grain and coffee notes, balanced by a moderately firm hop bitterness. Fermentation character is complex with vinous esters and a hint of oak-derived woodiness.
