This Double IPA presents an intense aromatic profile driven by the synergy of Citra and Simcoe hops. Expect a vibrant display of zesty lime, mango, and passionfruit, underpinned by Simcoe’s characteristic resinous pine and subtle earthy spice. The sensory experience is designed for reflection, offering a lean, neutral malt backbone that allows the aggressive bitterness to shine without becoming harsh. At 8.7% ABV, a smooth, integrated warmth emerges, supporting a dry, crisp finish. It captures the essence of modern American hopping, balancing high-impact tropical fruit notes against a firm, lingering bitterness that invites a contemplative sip.

Appearance. Deep gold to light copper (6–10 SRM) with good clarity, though a very slight dry-hop haze may be present. Topped by a moderate-sized, persistent off-white head with excellent lacing.

Aroma. High intensity hop aroma featuring prominent notes of grapefruit, mango, and tropical fruit from the Citra, alongside the resinous pine and slight damp-earth pungency of Simcoe. Malt is low and neutral, providing a clean, grainy-sweet backdrop. Fermentation is clean with very low fruity esters.

Taste. Strong hop flavors of citrus zest, passionfruit, and resinous sap dominate. The bitterness is high but clean and well-integrated. Malt flavor is low, suggesting neutral pale grains with a hint of crackers, keeping the balance firmly on the hops. The finish is dry to medium-dry with a long, lingering hoppy aftertaste and no harsh astringency.

Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is moderate-high, providing a crisp bite that accentuates the dry finish. A noticeable but smooth alcohol warmth is present, appropriate for the 8.7% strength.
