This Berliner Weisse is an exceptionally refreshing, sessionable tribute to the classic German style, featuring a modest 2.9% ABV. It presents a crisp, clean lactic sourness that defines the sensory experience, supported by a delicate, doughy malt backbone derived from Pilsner and wheat malts. The unique addition of nísperos, or loquats, imparts a subtle, nuanced fruitiness reminiscent of soft apricot and tart peach, integrating seamlessly with the style's natural fermentation esters. Highly effervescent and bone-dry, the beer lacks any perceptible hop bitterness, relying instead on its bright acidity to provide a thirst-quenching, palate-cleansing finish that invites another sip.
Appearance. Very pale straw color (2 SRM). Displays a slight haze from the wheat and fruit addition, topped with a large, dense white head that exhibits poor retention. Highly effervescent with visible carbonation rising.
Aroma. Intensity is moderate-high with a dominant sharply sour lactic character. Clean aromas of raw bread dough and grainy wheat are present. The nísperos contribute a subtle fruitiness suggesting apricot and tart apple, complemented by light floral notes. No hop aroma is detectable.
Taste. Initial impression is a sharp, clean lactic sourness. A complementary doughy and grainy wheat malt flavor is noticeable throughout. The loquats provide a restrained but bright fruitiness of peach and citrus. There is no detectable hop bitterness or flavor; the balance is purely driven by acidity. The finish is very dry and crisp with a lingering tartness.
Mouthfeel. Light body that remains crisp rather than thin. Very high carbonation creates a tingly, effervescent sensation. No alcohol warmth is perceived. Features a sharp, refreshing acidity.
