Sour Ale 5 º
Slow Life emerges as a sophisticated Straight Sour Beer, defined by a patient thirteen-month barrel residency. The initial four-month oak fermentation lays a woody foundation, followed by nine months in Chardonnay casks that imbue the profile with elegant vinous notes and delicate white grape nuances. A base of pale malt provides a subtle crackery backbone, allowing a clean, sharp lactic acidity to take center stage. Despite its extended aging, the character remains refined and refreshing, blending the tartness of green apple and lemon with sophisticated dry oak tannins and a whisper of buttery vanilla from the white wine barrels.
Appearance. Very pale straw (2-3 SRM). Clear to somewhat hazy with an effervescent character. Large, dense white head with poor retention, typical of highly acidic styles.
Aroma. High intensity, sharply sour character dominating with clean lactic notes of lemon and tart apple. Low crackery malt depth is present, complemented by a sophisticated Chardonnay barrel influence of white grape and light, dry oak. No hop aroma is present.
Taste. Initial impression is a clean, sharp lactic sourness that dominates the palate. Low bready and grainy malt flavors provide a brief foundation before being overtaken by citrusy lemon and vinous Chardonnay notes. Hop bitterness is undetectable, and there is no hop flavor. The finish is very dry and crisp with lingering acidity and a subtle tannic oak presence.
Mouthfeel. Light body with moderate to high carbonation providing a lively, effervescent feel. Crisp acidity creates a mouth-watering sensation with no noticeable alcohol warmth and very low astringency from the oak barrels.
