Pirate Hill is a collaborative New England IPA that presents as a complex Wild Specialty Beer. This beer delivers a sensory explosion driven by a double dry-hop addition of Mosaic, Simcoe, and Enigma. The visual profile is markedly turbid, leading into an aromatic profile where tropical fruit and pine meet the rustic, funky depth of a wild fermentation. On the palate, the assertive bitterness—unusual for the base style—is balanced by a full body and the sharp, drying acidity characteristic of its wild nature. It is a bold, hop-forward experience that fuses London and Spanish brewing sensibilities.
Appearance. SRM 4-6. Opaque and very turbid gold. Features a dense, creamy white head with moderate retention and significant lacing on the glass.
Aroma. High intensity. Prominent tropical fruit (mango, papaya) from Mosaic and resinous pine from Simcoe, layered with the unique red berry and white wine notes of Enigma. A distinct wild character provides earthy funk, light leather, and a sharp lactic tartness.
Taste. Initial punch of tropical fruit, blueberry, and citrus. Low bready malt flavor. The hop bitterness is firm and assertive, atypical for the style but following the brewer's intent. Fermentation character is complex, featuring a notable sourness and funky Brettanomyces depth. The finish is very dry with lingering hop resins and a crisp, acidic aftertaste.
Mouthfeel. Medium-full body with a soft, creamy texture. Carbonation is moderate. A light alcohol warmth is present at 6.4% ABV, complemented by a slight hop-derived astringency that enhances the dry finish.
