This collaborative Specialty IPA presents a sophisticated sensory tapestry, blending the bright, citrusy core of a White IPA with the botanical elegance of rosemary honey and thyme honey. Infused with orange peel, the profile opens with vibrant zest and floral perfumes that lead into a structured palate of bready wheat and herbal sweetness. The 7.7% ABV is seamlessly integrated, offering a gentle warmth that enhances the honey’s nectar-like quality without cloying. It is a harmonious marriage of hop-forward bitterness and delicate aromatics, resulting in a complex, refreshing, yet substantial take on the style that emphasizes a clean, resinous finish.

Appearance. Pale gold to deep yellow (4-7 SRM). Notable haze consistent with wheat-based styles. Dense, persistent white head with excellent lacing.

Aroma. High intensity aromatics featuring dominant orange peel zest and citrusy hops. Distinctive herbal notes of rosemary and thyme from the honey additions provide a floral, earthy layer over a background of bready, grainy wheat malt. Clean fermentation profile with very low spicy phenols.

Taste. Initial impression is citrus-forward with resinous hop flavors. The mid-palate introduces a delicate honey character, revealing specific herbal notes of rosemary and thyme. Bitterness is firm but clean, balancing the honey sweetness. Malt flavor is low, characterized by bready wheat. The finish is moderately dry with a lingering citrus and herbal aftertaste.

Mouthfeel. Medium body with a creamy, smooth texture derived from the wheat. Carbonation is moderate to high, providing a crisp sensation. Noticeable but well-integrated alcohol warmth is present.
