This collaborative Saison interprets the Mexican Tepache tradition, utilizing a sour mash process and fresh pineapple to create a vibrant sensory experience. The aroma is a complex weave of tropical pineapple esters and classic black pepper phenols typical of Belgian yeast. The addition of yogurt provides a unique, soft creaminess and a subtle lactic tang that complements the sharp, refreshing acidity. It presents as a pale gold, effervescent ale with a rustic, grainy backbone. The finish is remarkably dry, leaving a lingering impression of sun-ripened fruit and spicy yeast character, embodying a modern farmhouse profile.
Appearance. Pale gold (6 SRM) with a slight, protein-like haze from the fruit and yogurt additions. Features a dense, rocky, long-lasting white head with significant Belgian lacing.
Aroma. High intensity of fresh pineapple and tropical esters. Distinctive spicy phenols resembling black pepper are prominent. A light, tangy lactic note from the yogurt and sour mash persists over a subtle, grainy malt base with minimal earthy hop character.
Taste. The palate opens with a refreshing, tart pineapple flavor and citrusy acidity. A soft, grainy malt presence is quickly overtaken by the sour mash character. Bitterness is kept low to balance the acidity rather than compete with it. The fermentation profile is clean but characterful, leading to a very dry, crisp finish with a lingering spicy and fruity aftertaste.
Mouthfeel. Medium-light body with a subtle, creamy texture attributed to the yogurt. Very high carbonation provides an effervescent, prickly mouthfeel. No significant alcohol warmth.
