This Straight Sour Beer presents a refreshing and sophisticated profile defined by its mixed-fermentation heritage. A massive elderflower aroma leads the experience, offering delicate floral and lychee-like notes that weave through a complex lactic acidity. The base of pale malts provides a subtle, crackery foundation, supporting a bright, lemony brightness without the one-dimensional edge of a kettle sour. As a mixed-culture ale, the acidity is layered and integrated, finishing bone-dry and effervescent. It strikes a beautiful balance between the botanical perfume of the elderflower and a crisp, tart palate that remains incredibly drinkable at its sessionable strength.
Appearance. Pale straw (2-3 SRM); slight haze from mixed fermentation; large, white, dense head with moderate-low retention; highly effervescent.
Aroma. High intensity; massive floral elderflower notes reminiscent of lychee and white grape; sharp lactic sourness providing lemon and tart apple cues; low crackery and grainy malt; no hop aroma; clean yet complex fermentation profile.
