Riding presents a captivating fusion of rustic wild fermentation and nostalgic indulgence, evocative of an old-fashioned strawberry cake. Vibrant notes of garden-grown Fraise and delicate, perfumed Fraise des bois lead the sensory experience, offering a layered berry complexity that dances between sweet jamminess and bright, wild tartness. Appearance. Deep gold to pinkish-amber (6–12 SRM). Pink-tinted, off-white head with moderate to low retention and light lacing. Hazy clarity due to heavy fruit usage and wild yeast suspension.
Aroma. High intensity. Dominant aromas of ripe garden strawberries and intense, floral wild strawberries. Moderate lactic tartness and a supporting funky character reminiscent of wet hay or light leather. A subtle bready, cake-like malt backbone provides a sweet contrast to the acidic sharpness. No hop aroma.
Taste. Immediate burst of succulent strawberry and concentrated wild strawberry flavors. The cake-like character manifests through a light, biscuity malt sweetness that is quickly overtaken by a moderate to high lactic acidity. Hop bitterness is very low, allowing the fruit tannins and sourness to provide structure. The finish is dry and crisp, with lingering notes of tart berry skin and a faint earthy funk.
Mouthfeel. Medium-light body with a refreshing, prickly high carbonation. A light alcoholic warmth is present but well-integrated at 7% ABV. Slight tannin from the fruit skins provides a faint, pleasant astringency that enhances the dry finish.
