La Débauche Red is a vibrant and decadent Wild Specialty Beer that masterfully bridges the gap between a sharp forest-fruit sour and a rich dessert. The sensory experience is dominated by an intense, jammy expression of fresh blueberries and tangy blackcurrants, providing a deep, crimson-purple character. A smooth layer of vanilla weaves through the mid-palate, softening the bright acidity and introducing a creamy, pastry-like roundness. This interplay of tart berry skins and luscious sweetness creates a complex, multi-dimensional profile, where the underlying wild fermentation provides a clean, acidic backbone that keeps the finish refreshing despite its luxurious, fruit-heavy composition.
Appearance. Deep, opaque purple-red; dense, pink-tinted head with moderate retention and light lacing; significant haze from fruit solids and vanilla.
Aroma. High intensity; dominant aromas of ripe blueberries and tart blackcurrants with strong secondary notes of sweet, creamy vanilla. Minimal malt presence; no hop aroma. A clean, sharp lactic acidity is present with very subtle underlying funky esters.
Taste. Bold, tart berry burst of blueberry and blackcurrant. The acidity is firm but balanced by a noticeable residual sweetness from the vanilla. Minimal hop bitterness; low cereal-grain malt flavor. The finish is lingering and fruity with a creamy mouth-coating quality, ending on a clean, acidic snap.
Mouthfeel. Medium-full body, notably viscous; moderate carbonation; light alcohol warmth; high creaminess; low tannin-driven astringency from berry skins.
