La Calavera Metamorphosis is a sophisticated Straight Sour Beer that transcends its style through extensive whiskey barrel aging. The sensory experience is defined by a sharp, clean lactic sourness that intertwines with the deep, toasted character of a red malt base. Aromatically, it leads with tart lemon and green apple, layered over whiskey-derived notes of charred oak and soft vanilla. At 7% ABV, it carries a graceful, integrated warmth that bolsters the medium-bodied frame. The palate balances intense acidity with subtle hints of caramel and dried red fruit, culminating in a bone-dry finish with a lingering complexity from the wood maturation.

Appearance. Deep copper to reddish-amber (12–18 SRM). Features a moderate, off-white to light-tan head with fair retention and slight lacing. Clarity is generally clear, though it may show a faint haze from its time in the barrel.

Aroma. High intensity lactic sourness provides a sharp lemon and tart apple foreground. The red malt bill contributes bready and light caramel notes, while the whiskey barrel presence adds distinct layers of vanilla, toasted oak, and a faint spirituous character. No hop aroma is present.

Taste. Initial impression is a dominant, clean lactic acidity that presents flavors of tart cherry and lemon. The whiskey barrel aging introduces complex oak tannins and a whisper of vanilla that rounds out the sharp edges. Malt flavors are bready and slightly toasty, providing a necessary counterpoint to the sourness. The finish is dry and acidic with a lingering, woody aftertaste and no detectable hop bitterness.

Mouthfeel. Medium body, showing more weight than a standard sour due to the alcohol and wood tannins. High carbonation provides an effervescent, prickly sensation. A noticeable but well-integrated alcohol warmth is present, providing a smooth finish without harshness.
