This Brett Beer presents an assertive sensory profile defined by its intensive Brettanomyces fermentation. It opens with an expressive bouquet of overripe tropical fruit, dried hay, and a distinct leathery funk that signals a complex evolution. Despite the 8% ABV, the body remains nimble due to high attenuation, offering a crisp, bone-dry palate. Flavors of apricot and tart citrus meld with earthy, barnyard undertones, supported by a subtle, underlying malt backbone. The finish is clean and lingering, punctuated by a fine, prickly carbonation and a sophisticated, well-integrated alcoholic warmth that never overshadows the bold, wild fermentation character.
Appearance. Deep gold to light amber in color (7–12 SRM). Exhibits a slight haze with a persistent, fine-beaded white head that leaves moderate lacing on the glass.
Aroma. High intensity with a complex layering of funky barnyard, wet hay, and aged leather. Complementary esters of pineapple, bruised peach, and citrus zest are prominent, with minimal hop presence and very low bready malt notes.
Taste. Initial impression is exceptionally dry and fruit-forward with notes of tart apple and berry. This evolves into a rugged earthiness and light wood-like character. Bitterness is low to moderate, serving only to balance the fermentation profile. The finish is very dry and crisp with a lingering, funky aftertaste.
Mouthfeel. Medium body with a lively, high carbonation that creates a prickly sensation on the tongue. A gentle, well-integrated alcoholic warmth is present, though the mouthfeel remains lean and devoid of syrupy sweetness.
